Cooking Gluten-Free

As with so many things in life, there is an upside and a downside to cooking with Gluten-free flours.

The upside is that you can manipulate your pastry as much as you want and they will the pastry will not get tough.

The downside is that cooking with these flours is like cooking with talcum powder. No matter how careful you are, the stuff “drifts” and you find it all over the house on your furniture, down your pant legs, on your glasses and just about anywhere else it has a mind to go.
